Chef John’s Drunken Noodles
Thai drunken noodles from Chef John are simple to make and will fill you up with their savory, spicy flavors.
Give rice noodles a 10- to 15-minute soak in hot water to make them flexible.
Move the noodles occasionally to keep them apart.
After draining the water, place a wet paper towel on top.

In a wok or sizable frying pan, heat sesame oil and vegetable oil over medium-high heat.
Garlic, chili peppers, and shallots should be stir-fried for 2 minutes or until the shallots are soft.

After one minute, add the shallot mixture and continue to sear.
Stir-fry the Chinese broccoli stems for about 2 minutes, or until they are tender.
Chinese broccoli leaves should be added and stir-fried until wilted.
