Apple Pie Jelly
Homemade apple jelly spiced with cinnamon and nutmeg will taste just like mom’s apple pie but have endlessly more uses as a topping or filling.
Check six half-pint jars for cracks and rust on the rings, and discard any that are damaged.
Immerse until jelly is ready in simmering water.
Clean rings and new lids in warm, soapy water.
In a large saucepan, combine the apple juice, maple syrup, cinnamon, and nutmeg.
Add the pectin, then boil the juice vigorously until the pectin dissolves.
Add sugar gradually while re-bringing the mixture to a rolling boil over high heat.
Boil for exactly one minute.
Remove the mixture from the heat and use a metal spoon to remove the foam.
