Bill Clinton’s Lemon Chess Pie
Lemon juice and the zest of three lemons make this chess pie divine. The filling is thickened with cornmeal, and is rich with whole milk and eggs.
Set oven to 350 degrees Fahrenheit (175 degrees C).
Butter or margarine and sugar are combined in a sizable mixing bowl and creamed until light and fluffy.
Mix in milk and eggs.
Add the flour, cornmeal, lemon rind, and juice.
Blend until uniform.
Add mixture to pastry case.
Bake for 35 to 40 minutes in a preheated oven, or until the center is set.
