Cornish Hen with Tart Cherry Sauce
While herbed Cornish hens bake in the oven, a rich, tart cherry sauce simmers on the stovetop. Make during the week or serve to your preferred dinner company.
Set oven to 350 degrees Fahrenheit (175 degrees C).
In a bowl, combine paprika, rosemary, garlic powder, sea salt, and black pepper.
Hens should be placed on a baking sheet and covered with 5 tablespoons of butter.
Rub the spice mixture on the hens.
Bake hens in a preheated oven for 1 1/2 hours, basting with white wine every half-hour, or until the juices run clear and the meat is no longer pink at the bone.
180 degrees Fahrenheit should be displayed on an instant-read thermometer inserted into the thickest part of the thigh, close to the bone (82 degrees C)
