Moroccan Vegan Tagine
Lentils, sweet potatoes, and more root vegetables soak up a tomato sauce full of colorful spices to make this hearty, vegan Moroccan tagine.
Lentils and water should be combined in a pan.

For about 20 minutes, reduce heat to medium-low, cover the pot, and simmer the lentils until they are tender and the liquid has been absorbed.
In a skillet or tagine, heat the oil over medium-high heat.
About 5 minutes of sauteing should produce browned, translucent onions.
Add the following: salt, pepper, turmeric, coriander, and cumin.
For about 3 minutes, cook and stir until fragrant.
Add the cooked lentils, potatoes, crushed tomatoes, carrots, and sweet potatoes.
Add vegetable broth, lower the heat, and simmer the vegetables for about 40 minutes, or until they are tender.
