Spicy Sweet Potato and Coconut Soup
With coconut milk and curry paste, sweet potato soup is prepared in the Asian style. This soup is incredibly tasty and simple to make.
Set the oven to 400 degrees Fahrenheit (200 degrees C).
Place the sweet potatoes directly on the rack and bake for 45 minutes, or until they are easily pierced with a fork.
Take the food out of the oven, then let it cool.
Over medium heat, warm the oil in a sizable soup pot or saucepan.
Cook and stir the onion and ginger for about 5 minutes, or until they are soft.
After heating for one minute while stirring in the curry paste, add the coconut milk and vegetable broth.
Boil for a few minutes, then simmer for about five minutes on low heat.
