Spinach and Mandarin Orange Salad
A warm homemade dressing gives a spinach and mandarin orange salad with bacon, slivered almonds, and other ingredients a fresh new look that is sure to impress your guests.
In a saucepan, combine the vinegar, sugar, water, butter, and salt; bring to a boil.
Cook and stir for about a minute, until sugar is dissolved and mixture is bubbling.
Remove from heat and allow to cool for about an hour to reach room temperature.
Stir the egg into the dressing; put the pan back over low heat and cook for 5 to 10 minutes, or until the dressing thickens.
In a large bowl, combine the spinach, mushrooms, mandarin oranges, almonds, bacon, red onion rings, and croutons.
Drizzle the salad with the dressing.
