Super Moist Pumpkin Bread
This is an incredible bread. Its moistness comes from the addition of an unusual ingredient: coconut milk! Originally submitted to ThanksgivingRecipe.com.

Set oven to 350 degrees Fahrenheit (175 degrees C).

Two 8×4-inch loaf pans should be greased and floured.

Combine the flour, brown sugar, white sugar, coconut milk, baking soda, salt, ground nutmeg, and cinnamon in a large bowl.

Mix until no more flour is visible.

Add the nuts and coconut flakes and stir.

Batter should be poured into the prepared pans.

Bake for 1 hour and 15 minutes at 350 degrees F (175 degrees C) or until a toothpick inserted in the center of the cake comes out clean.

Remove from oven and tightly wrap loaves in foil.

10 minutes of steaming is acceptable.

Turn over onto a cooling rack after removing the foil.

Allow to completely cool while lightly securing with the foil tent.
