Add salt, baking soda, and baking powder to the flour.

Mix the oil, eggs, vanilla, sugar, cinnamon, and nutmeg in a sizable bowl.

Add pineapple and zucchini and blend.

Combine zucchini mixture and flour mixture.

Fill two greased and floured 9 x 5 inch loaf pans with the batter.

Bake for one hour at 350 degrees F (175 degrees C).
