Haitian Wheat Bread

In a small bowl, combine water and brown sugar.
Over the surface, evenly distribute the yeast.
For about 7 minutes, until the yeast softens and begins to foam, cover with a clean cloth and allow to stand.
In a big bowl, combine salt, all-purpose flour, whole wheat flour, and shortening; stir until shortening is well combined.
Pour in the yeast mixture and stir with a wooden spoon or your hands until the dough comes together.
Add flour to a flat work surface.
