Jazzy New Orleans Chicken
Browned chicken pieces simmer with smoked sausage, rice, and bell peppers in this easy one-pot meal.
Turn the chicken in the flour to coat it completely.
Oil should be heated over medium heat in a large pot or Dutch oven.
Chicken pieces should be browned for about 8 minutes per side.
Place on plate.
In the pan, mix the sausage, garlic, onion, peppers, tomatoes, sugar, thyme, oregano, salt, and allspice.
Cook for 10 minutes, stirring occasionally, over medium heat, or until peppers are soft.
Add stock and stir in the rice.
Rice should have chicken in it.
up to a boil.
Cover and lower the heat.
Cook for 20 to 25 minutes, or until chicken juices are clear when pierced and liquid has been absorbed.
Serve with parsley on top.
Adding lemon slices as a garnish is optional.
